🔸 Melt the sugar, cream and butter together, making sure it is evenly distributed.

🔸 Stir the mixture together and immediately you start to boil, stop the stir but instead tilt or swirl the pan until the heat reaches 140⁰C

🔸 Remove from heat and allow it to cool down for some time and carefully pour the molten toffee into a prepared tin, swirling the pan until the toffee is fully covering the base.

 🔸 Leave for 2 hours or even overnight if possible. Lift the baking parchment to lift the toffee out and then cut into squared. Oil the knife if the toffee is sticking to it.

🔸 Wrap the toffee in a waxed paper and then store in a airtight container or jar for about two weeks.
