3 large-sized eggs
1 tsp vanilla extract or vanilla bean paste
4 tbs milk full fat or semi-skimmed milk
Half tsp baking powder (optional)
Instructions for making your vanilla sponge cake are:
Weigh out each of the ingredients in the recipe above.
Preheat the oven at 180°C/375°F or 160°C/320°F (if you are using a fan oven)
Set out the baking tins, preferably 2 by 8-inch tins and grease each cake tin first  then line the bottom with parchment paper.
Transfer the sugar and butter into a hand mixer or stand mixer and cream until the mixture becomes light and fluffy. This should be around three to five minutes.
Add each egg one at a time along with the vanilla extract and mix until the mixture is evenly mixed and smooth.
Add the flour and baking powder. Baking powder is optional.
Turn the flour into the mixture with a wooden spoon until even and well mixed. Finally , add the milk and mix well until it is well combined into the batter.
Share the batter into each of the prepared tins and set in the oven to bake for between 25 – 30 minutes or until cake tester/skewer comes out clean.
Remove cake from the oven. Leave to cool , remove from the tin and set on a cooling rack.
